Where did that come from and easy Avocado Mango Black Bean Salsa – Yummy!

Today’s post comes to you compliments of my kids and grandkids

Have your kids ever said something and you wondered where in the hell did THAT came from?  It happens all the time in my family and people always tell me that I should write this stuff down, so I am doing just that.  In no particular order is some of the humdingers that have popped up through the years:

Mr C – Sweet practical Colty, (I will call him Mr C) and I were having a conversation about my fear of bats. You know, those creepy hang upside downy black things.  Bats creep me out PERIOD. I am paranoid that they will get caught up in my hair or worse yet, get stuck in my hoodie while we are outside by the campfire.  Anyway, we were talking about scary things and he made up a song for me.  I have it preserved on my cell phone but the gist of it is this: When you see a bat and you get super scared, you’ll just get use of it. You’ll just get use of it. When you see a bat, just call me but you’ll get use of it, just get use of it.  See for yourself if you don’t believe me! https://www.youtube.com/watch?v=Kn66SwmtJaM.  But, you’ll get use of it is now our tag line whenever someone is bitchin and belly aching about something. KC: Our beautiful middle child (I will call her KC, since that’s her name)…..she was a cutie pie and many funny things have popped out of her mouth, some appropriate and some not so much so I will stick to G rated things for this post. Anyway, she was about 4 years old and she had gotten this cute pair of white cowboy boots for Christmas that year that she never took off, I mean NEVER. I had to pry them off her for baths and bedtime. Well, on this particular evening she obviously went to bed with them on and in the middle of the night, she came down to our bedroom and climbed onto the bed and said to her dad; “Dad, I’ve got wild hair and no panties”!  He then turned to me and said, why can’t you ever say that?  I still remember her standing there with her bed head hair and twirling on the bed with her cute little jammies, no panties and those damn white cowboy boots.  Brings a smile to my face every time I think about it!

Miss M: Let’s move on to Miss M (the oldest 3-year-old in our family). Miss M comes from a family with 2 brothers, a baby sister and her mom and dad, so lots of appropriate and inappropriate kidism’s are flying around. The other day Miss M asked her mom “please give me my lunch sh*^.”  Her mom said, pardon? Miss M asked again for her lunch sh*^.  Our daughter was now trying to wrap her head around this request and figure out how to navigate this touchy situation.  So, she finally got her composure and asked Miss M one more time and this time Miss M let her know that what she wanted was just her lunch KIT.  That was 4 minutes of our daughter’s life that she will never get back lol!

Big E: Not to be left out of this post is Big E, who turns 7 in August. Big E likes to come camping with us regularly but he sometimes is a bit clumsy and somewhat scattered.  He is a typical boy who likes to skip rocks, ride his bike, swim and kick around a soccer ball but he can be unfocused at times, like all 7-year old’s.  Big E was about 5 and we had the boys camping with us. One morning, Big E asked if he could go into the trailer and I thought he was just going to use the bathroom but he was gone for quite a while.  Finally, I decided that I needed to go check on him so I walked in the trailer calling for him and he was sitting nicely at the table coloring.  I asked him what he was doing and he looked right at me and said…..”Grandma, I’m not dicking around”. What do you say to that one? It doesn’t happen very often but I was speechless. I had to turn away so he wouldn’t see me laughing and all I could think of to say was “I’m glad to hear that buddy”.

Two more and I will save the rest for another post, but stay tuned there are more doozies to come!

KC: Throwback to Kindergarten, aren’t kindergarteners the cutest? I love the Christmas concerts, the little crafts they make for Mothers and Father’s Day and I love their cute little Halloween Parades.  Anyway, our cute little kindergartener came home from school one day wearing a crown.  When we asked her why she had the crown, she sweetly said “They had a party for me”.  Me: Why? KC: ” I told them it was my birthday.” To which I said “but it’s not your birthday” and she matter of factly said “I know, but they don’t know that”.  What’s a mom supposed to do then?  All I could say is “well honey, you are going to have to tell your teacher tomorrow that it isn’t your birthday and that you were confused lol. How else do you fix that fib? She was so cute and so proud of her crown and now that she is older, we tease her about her Birthday Not Birthday!

Miss M: Miss M was taking a walk with us one day and she was walking ahead of my husband and me.  ½ way around the block she turned around and sweetly said “Come on you little Pecker Head”.  Shock is an understatement………we were again at a loss for words but my husband just looked at her and said; “my name is Poppa, not Pecker Head, thank you very much.”

There are many more where these came from but I will save them for another post.  For now, I will leave you with this yummy Avocado Mango Black Bean Salsa that I made for a baby shower recently.

Avocado Mango Black Bean Salsa

Ingredients

For the Dressing

• 2 Drops of Lime Essential Oil (this is my own add on!)

 

Directions

1. Mix all ingredients for the salsa in a large bowl. Combine the ingredients for the dressing in a measuring jug and whisk together well. Pour over the salsa and carefully stir. Serve immediately.
