Simple Lemon Herb Chicken

A light, fresh meal for when you want something homemade without a lot of fuss.

Ingredients
  

  • 2-4 Chicken breasts or thighs Boneless Skinless
  • 2 Tbsp Olive Oil Extra Virgin
  • 1 Lemon Juice of 1 lemon or 2-3 Tablespoons lemon juice
  • Zest of ½–1 lemon Optional but a lovely touch
  • 2-3 Cloves Galic Mnced
  • 1 Tsp Dried thyme OR Italian seasoning
  • 1 Tsp Dried parsley Or 1 tbsp fresh
  • Salt & pepper to taste

Instructions
 

  • Preheat the oven to 375°F (190°C)

  • Lightly oil or line a baking dish with parchment paper
  • Make the Marinade

In a small bowl whisk together, Olive oil, Lemon juice + zest, Garlic, Herbs, Salt & pepper. It should smell fresh and bright.

    Prep the Chicken

    • Place chicken in the baking dish. Pour the marinade over it and turn pieces to coat well.
      👉 If you have time, let it sit 15–30 minutes (optional but adds flavour).

    Bake

    • Bake uncovered for:
      Chicken breasts: 25–30 minutes
      Chicken thighs: 30–35 minutes
      Chicken should reach 165°F / 74°C internal temp.

    Rest Before Serving

    • Let chicken rest about 5 minutes so juices stay in
