Simple Lemon Herb Chicken

A light, fresh meal for when you want something homemade without a lot of fuss.

- 2-4 Chicken breasts or thighs Boneless Skinless
- 2 Tbsp Olive Oil Extra Virgin
- 1 Lemon Juice of 1 lemon or 2-3 Tablespoons lemon juice
- Zest of ½–1 lemon Optional but a lovely touch
- 2-3 Cloves Galic Mnced
- 1 Tsp Dried thyme OR Italian seasoning
- 1 Tsp Dried parsley Or 1 tbsp fresh
- Salt & pepper to taste
In a small bowl whisk together, Olive oil, Lemon juice + zest, Garlic, Herbs, Salt & pepper. It should smell fresh and bright.
Prep the Chicken
Place chicken in the baking dish. Pour the marinade over it and turn pieces to coat well.👉 If you have time, let it sit 15–30 minutes (optional but adds flavour).
Bake
Bake uncovered for:Chicken breasts: 25–30 minutesChicken thighs: 30–35 minutesChicken should reach 165°F / 74°C internal temp.
