Over 3900 recipe pins are making me a little cuckoo, especially if I am looking for one specific recipe or ingredient. Yes, I do use the search function but I know I need to organize them if I am going to be using Pinterest to its fullest for what I like to do! Where do I start?
To start with, I looked through my recipe board and deleted any recipes that were duplicates. The next thing that made sense for me was to make a new board with recipes I have made and would like to try again (Tried and True Recipes), which took 121 recipes out of the main board. Next question was what to do with the other 3800 pins?! So, I relaxed with a cappuccino and went to work. I decided to take the rest of the recipe pins and divide them into distinct categories:

It’s a start, there will likely be another change coming up when I get frustrated again and am unable to find what I am looking for!

I made this super easy Strawberry Salsa for my nieces wedding shower last week. My niece is a major tea lover and we were having all finger type snacks, you know, things that are appropriate for a tea party and this Strawberry Salsa was a perfect fit and everyone loved loved loved it (NOTE: I didn’t feel the need to add any other sweetener but I’m sure it would be great with a hint of honey or agave)! Thank you, Gimme Some Oven for again making me a star in the kitchen!
5-INGREDIENT STRAWBERRY SALSA
YIELD: 4 – 6 Servings
This 5-Ingredient Strawberry Salsa is sweet, simple to make, and so delicious
TOTAL TIME: 10 MINS PREP TIME: 10 MINS COOK TIME: 0 MINS
INGREDIENTS:
- 1 pint strawberries, hulled and finely diced
- 1 jalapeno, stem and seeds removed, finely diced
- Half of a small red onion, peeled and finely diced (about 1/2 cup)
- 2/3 cup finely-chopped fresh cilantro, loosely-packed
- Juice of 1 lime, about 2 tablespoons
- Pinch of salt and black pepper
DIRECTIONS:
Toss all ingredients together until combined. Season with extra salt and pepper, if needed.

The next recipe I want to share with you is a homemade spaghetti sauce using only fresh ingredients and nothing from a jar or envelope. I made this the other day and was amazed at how light and flavorful it turned out. Be sure you have fresh tomatoes to make this, the fresher the better! Give it a try and let me know how you like it. Also, if you don’t have one of these, you need to run out and get one. It’s called the garliczoom by Chefn. This little baby has made my life so much easier and it will do the same for you, especially if you have reduced strength in your hands. You just pop the garlic in and zoom it along……Presto – minced garlic!
Fresh and Zesty Spaghetti
Cook Time: 25-30 minutes
Serves 5 – 6
INGREDIENTS:
- 1 lb spaghetti (pre-cook in salted water and reserve ½ cup of water)
- 6 fresh tomatoes diced
- ½ orange or yellow pepper diced
- ½ red onion diced
- 3 minced garlic cloves (more if you love garlic, less if you don’t!)
- ¼ cup olive oil
- 1 tsp salt
- ½ tsp pepper
- 1 ½ cup cooked mild Italian sausage (or spicy sausage is you prefer)
- ¼ cup grated parmesan cheese
- 2 tsp fresh thyme
- 1 tablespoons fresh oregano chopped
- ½ cup water left over from cooking the pasta
- Basil and freshly grated parmesan cheese for topping
DIRECTIONS:
Heat a large pot to medium heat and add the tomatoes, pepper, onion, garlic, olive oil, salt, pepper and thyme and oregano. Cover the pot and cook on medium – low heat for 10 minutes. Remove the cover and add the ½ cup of water that was left over from the spaghetti and continue cooking on low until heated through.
Lastly, add the drained pasta to the sauce with the cooked sausage & parmesan cheese tossing together until the pasta is well coated
Serve with fresh basil and freshly grated parmesan cheese
