Things I’m Learning in This Season

For a long time, life felt like it was lived in fast-forward.

The years in the trenches of raising kids, working full time, juggling schedules, responsibilities, worries, and dreams — all overlapping and happening at once. There were lunches to pack, late nights to power through, bills to pay, careers to manage, and the constant mental checklist that never really shut off.

Somewhere along the way, days blurred into years.

Then came the quiet shift into empty-nesting — a transition no one really prepares you for. The house got quieter. The pace changed. The roles I’d worn so tightly for so long loosened, and I had to learn who I was when I wasn’t needed in quite the same way every single day.

And just as that space opened, grandkids arrived — bringing joy, noise, laughter, and a completely different kind of fullness. Less responsibility, more presence. Fewer rules, more wonder. A reminder that love doesn’t end when one season closes — it simply changes shape.

That stretch of life moved fast. Beautiful, exhausting, meaningful, and relentless all at once.

Somewhere in the middle of all of it came my Multiple Sclerosis diagnosis — not as a full stop, but as a quiet turning point. A reminder that bodies change, energy shifts, and life doesn’t always ask before it rewrites the pace.

And this season?
This one is asking me to slow down.

I’m learning that it’s okay not to rush into the next thing just because I can.
That rest isn’t laziness.
That quiet days are not wasted days.

There’s a softness to this season — one that’s teaching me to move through my days with more intention. To listen to my body. To pay attention to what feels grounding instead of what feels urgent.

Some days that looks like doing less.
Some days it looks like doing one thing well.

And that’s enough.

We’ve been nesting in our new home — and I’m realizing that nesting isn’t about hiding from the world.
It’s about creating a place you’re excited to come back to.

I’m learning how deeply comforting it is to put things away slowly.
To choose where something belongs and move it if it doesn’t work.
To cook familiar meals in a kitchen that finally feels like ours.

There’s something healing about unpacking a life you’ve chosen — one drawer, one room, one small ritual at a time. Our years of traveling were wonderful and deeply good for my soul, but in this season I’m realizing how much I missed being still. Not enough to stop exploring or escaping to warmer climates for a while — but enough to recognize how much I’ve missed this.

The choices we’ve made over the last years weren’t impulsive.
They were thoughtful. Sometimes heavy. Often emotional.

And now I’m learning what it feels like to live inside those choices.

Rooted choices don’t come with fireworks.
They come with peace.

They show up in mornings that feel calm instead of chaotic.
In evenings that don’t feel rushed.
In a sense of we’re where we’re supposed to be — even when life is still imperfect (because it always is).

This season is reminding me that joy doesn’t need to be extravagant to be meaningful.

It’s in:

  • sunlight hitting the kitchen counter just right
  • music playing while something simmers on the stove
  • familiar recipes with a small twist
  • meals shared at home instead of on the go

Food, especially, has been a beautiful anchor for me. Cooking grounds me. Feeding the people I love has always been my love language — and right now, it feels like a quiet celebration of everything we’ve chosen.

It’s fresh and nourishing, but still bold and satisfying. This salad feels like this season on a plate — grounded, flavorful, and just spicy enough to remind me that joy doesn’t disappear when life slows down. It just shows up differently.

Crunchy Hot Honey Chicken Salad

This is one of those salads that doesn’t feel like a compromise. It’s crunchy, a little spicy, a little sweet — and completely satisfying. The kind of meal you make when you want something fresh, but still crave comfort.

Ingredients
  

For the Hot Honey Chicken

  • 8 large Crunchy chicken tenders – Cooked and diced (See notes below for easy swaps — no judgment here)
  • ¼ Cup Honey Garlic Sauce Store bought or Homemade – see recipe below for homemade Honey Garlic Sauce
  • ¼ Cup Franks Red Hot Sauce I use the Buffalo Wings version of Franks
  • ¼ Cup Sweet Chili Sauce
  • 1 Tbsp Honey For drizzling (optional, but highly encouraged)

Salad Ingredients

  • 2 Heads Romaine Lettuce Washed and chopped
  • 6 Tbsp Ranch Dressing
  • ½ Red onion Diced
  • 1 Lg Red, Orange or Yellow Bell Pepper Diced
  • ½ English Cucumber Diced
  • Shredded Cheddar Cheese or Blue Cheese Optional but delicious

Instructions
 

  • In a small bowl, add the cooked chicken, honey garlic sauce, buffalo sauce, and sweet chili sauce. Toss until everything is coated and glossy — this is where the magic happens.
  • In a separate large bowl, toss the romaine with the ranch dressing. Add the red onion, bell pepper, and cucumber and gently mix until everything is lightly dressed and fresh-looking.
  • Divide the salad between two large bowls or plates. Top with cheese if you’re using it, then pile on that hot honey chicken.
  • Finish with a light drizzle of honey if you like a touch more sweetness.
  • Serve immediately — and yes, thank me later.

Notes & Easy Swaps

  • Want a lighter option? Use 2 cooked and diced chicken breasts instead of tenders.
  • Short on time? Pre-packaged cooked chicken chunks work beautifully and make this a true weeknight win.
  • Like it spicier? Add an extra splash of Frank’s. Sweeter? Another drizzle of honey never hurt anyone.

Honey Garlic Sauce

This is one of those sauces that quietly steals the show. Sweet, garlicky, and glossy — the kind you start making “for one recipe” and then find yourself spooning over everything. It technically keeps for two weeks… but let’s be honest, it won’t make it past a couple of days.

Ingredients
  

  • ¼ Cup Soy Sauce
  • ¼ Cup Honey
  • Cup Brown Sugar
  • 8-10 Garlic Cloves minced Measure with your heart!
  • 2 Tsp Sweet Rice Vinegar
  • ¼ Cup Water
  • 1 tbsp Corn Starch

Instructions
 

  • In a small saucepan, add the soy sauce, honey, brown sugar, garlic, and rice vinegar. Whisk until everything is well combined and smelling very promising.
  • In a small bowl, stir together the water and cornstarch until smooth and fully dissolved. Pour this mixture into the saucepan and whisk again.
  • Place the saucepan over medium heat. Whisking constantly, bring the sauce to a gentle boil.
  • Once boiling, lower the heat slightly and let it bubble away for about 5 minutes, whisking often, until thickened and glossy.
  • Remove from the heat and taste. Need more garlic? Add it. Want it a touch sweeter? Drizzle in a little more honey. This sauce is forgiving.
  • Transfer to a jar or serving bowl and let cool slightly — or use right away if you’re impatient (no judgment here).
