That’s why this hydrangea caught my heart.
In a new-to-us garden, every plant carries a bit of mystery. Someone else planted it. Someone else cared for it. And now it’s quietly becoming part of our story.
All winter it looked dormant, almost forgotten. Then the buds appeared — gentle, persistent, hopeful.
It reminded me that blooming doesn’t always look dramatic. Sometimes it looks like patience. Sometimes it looks like simply showing up again.

With the garden waking up again, I’ve been craving simple, fresh meals that feel just as hopeful as those first green buds. This lemon herb chicken is light, comforting, and easy on days when energy is limited but the desire for something homemade is still strong.

This is one of those recipes I lean on when energy is limited but I still want something nourishing. Minimal prep, bright flavour, and it makes the kitchen smell like you tried way harder than you actually did.
Simple Lemon Herb Chicken
Ingredients
- 2-4 Chicken breasts or thighs Boneless Skinless
- 2 Tbsp Olive Oil Extra Virgin
- 1 Lemon Juice of 1 lemon or 2-3 Tablespoons lemon juice
- Zest of ½–1 lemon Optional but a lovely touch
- 2-3 Cloves Galic Mnced
- 1 Tsp Dried thyme OR Italian seasoning
- 1 Tsp Dried parsley Or 1 tbsp fresh
- Salt & pepper to taste
Instructions
Preheat the oven to 375°F (190°C)
- Lightly oil or line a baking dish with parchment paper
- Make the Marinade
In a small bowl whisk together, Olive oil, Lemon juice + zest, Garlic, Herbs, Salt & pepper. It should smell fresh and bright.
Prep the Chicken
- Place chicken in the baking dish. Pour the marinade over it and turn pieces to coat well.👉 If you have time, let it sit 15–30 minutes (optional but adds flavour).
Bake
- Bake uncovered for:Chicken breasts: 25–30 minutesChicken thighs: 30–35 minutesChicken should reach 165°F / 74°C internal temp.
Rest Before Serving
- Let chicken rest about 5 minutes so juices stay in
Notes
- Roasted potatoes or veggies
- Simple green salad
- Rice or quinoa
- Or slice it for wraps/salads the next day
